- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Thyme - 1 teaspoon (fresh or dried)
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a medium pot over medium heat.
- Add diced onion, carrot, and celery; sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the cooked cannellini beans, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Remove the bay leaf and use an immersion blender to partially blend the soup for a creamier texture, if desired.
- Serve hot, garnished with fresh parsley.
