  • Celery - 1 stalk, diced
  • Tomato paste - 1 tablespoon
  • Fish stock - 500 ml
  • Coconut milk - 200 ml
  • Mixed seafood (shrimp, mussels, squid) - 300 grams, cleaned
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped shallot, and sauté until translucent, about 2-3 minutes.
  3. Stir in the diced carrot and celery, cooking for another 5 minutes until slightly softened.
  4. Add the tomato paste and cook for 1 minute, stirring to combine.
  5. Pour in the fish stock and bring to a gentle boil.
  6. Reduce the heat and add the coconut milk, stirring well.
  7. Add the mixed seafood and cook for about 5-7 minutes, or until the seafood is cooked through.
  8. Stir in the chopped parsley, basil, lemon juice, salt, and black pepper to taste.
  9. Serve hot, garnished with additional herbs if desired.
