- Celery - 1 stalk, diced
- Tomato paste - 1 tablespoon
- Fish stock - 500 ml
- Coconut milk - 200 ml
- Mixed seafood (shrimp, mussels, squid) - 300 grams, cleaned
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and chopped shallot, and sauté until translucent, about 2-3 minutes.
- Stir in the diced carrot and celery, cooking for another 5 minutes until slightly softened.
- Add the tomato paste and cook for 1 minute, stirring to combine.
- Pour in the fish stock and bring to a gentle boil.
- Reduce the heat and add the coconut milk, stirring well.
- Add the mixed seafood and cook for about 5-7 minutes, or until the seafood is cooked through.
- Stir in the chopped parsley, basil, lemon juice, salt, and black pepper to taste.
- Serve hot, garnished with additional herbs if desired.
