Ingredients

  • Fennel bulb - 1 medium (about 200g)
  • Potato - 1 medium (about 150g)
  • Onion - 1 small (about 100g)
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried)
  • Salt - to taste
  • Black pepper - to taste
  • Heavy cream - 50 ml (optional for creaminess)

Steps

  1. Trim the fennel bulb, removing the stalks and fronds, and slice it thinly.
  2. Peel and dice the potato into small cubes.
  3. Finely chop the onion and mince the garlic.
  4. In a medium pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic and sliced fennel to the pot, cooking for another 5 minutes until softened.
  6. Stir in the diced potato and thyme, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potato is tender.
  7. Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer to a blender in batches.
  8. If desired, stir in the heavy cream for added richness and season with salt and black pepper to taste.
  9. Serve hot, garnished with reserved fennel fronds or a drizzle of olive oil if desired.
