Ingredients
- Fennel bulb - 1 medium (about 200g)
- Potato - 1 medium (about 150g)
- Onion - 1 small (about 100g)
- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried)
- Salt - to taste
- Black pepper - to taste
- Heavy cream - 50 ml (optional for creaminess)
Steps
- Trim the fennel bulb, removing the stalks and fronds, and slice it thinly.
- Peel and dice the potato into small cubes.
- Finely chop the onion and mince the garlic.
- In a medium pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced fennel to the pot, cooking for another 5 minutes until softened.
- Stir in the diced potato and thyme, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potato is tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer to a blender in batches.
- If desired, stir in the heavy cream for added richness and season with salt and black pepper to taste.
- Serve hot, garnished with reserved fennel fronds or a drizzle of olive oil if desired.
