Ingredients
- Fennel bulb - 1 large (about 300g)
- Olive oil - 1 tablespoon
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Potato - 1 medium, peeled and diced
- Almond milk - 100 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Trim the fennel bulb, removing the stalks and fronds, and chop it into small pieces.
- In a medium pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped fennel to the pot, and cook for an additional 5 minutes, stirring occasionally.
- Add the diced potato and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the vegetables are tender.
- Remove the pot from heat and let it cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Return the blended soup to the pot and stir in the almond milk. Season with salt and black pepper to taste, and heat through for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
