Ingredients

  • Fennel bulb - 1 large (about 300g)
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Potato - 1 medium, peeled and diced
  • Almond milk - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Trim the fennel bulb, removing the stalks and fronds, and chop it into small pieces.
  2. In a medium pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped fennel to the pot, and cook for an additional 5 minutes, stirring occasionally.
  4. Add the diced potato and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the vegetables are tender.
  5. Remove the pot from heat and let it cool slightly. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  6. Return the blended soup to the pot and stir in the almond milk. Season with salt and black pepper to taste, and heat through for another 2-3 minutes.
  7. Serve hot, garnished with fresh parsley.
