- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 milliliters
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the shelled fava beans, thyme, bay leaf, salt, and black pepper. Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let it simmer for about 15 minutes until the fava beans are tender.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the lemon juice and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
