  • Celery - 1 stalk, diced
  • Vegetable broth - 500 milliliters
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the shelled fava beans, thyme, bay leaf, salt, and black pepper. Pour in the vegetable broth and bring to a boil.
  4. Reduce the heat and let it simmer for about 15 minutes until the fava beans are tender.
  5. Remove the bay leaf and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the lemon juice and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.
