Ingredients

  • Fresh watercress - 150 grams
  • Potato - 200 grams, peeled and diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion for about 5 minutes until translucent.
  2. Add the minced garlic and diced potato, stirring for an additional 2 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the potatoes are tender.
  4. Add the fresh watercress to the pot and cook for another 3-4 minutes until wilted.
  5. Remove from heat and blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in the coconut milk, lemon juice, salt, and black pepper. Adjust seasoning to taste.
  7. Serve hot, garnished with a few watercress leaves if desired.
