- Fresh watercress - 150 grams
- Potato - 200 grams, peeled and diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a pot, heat the olive oil over medium heat and sauté the chopped onion for about 5 minutes until translucent.
- Add the minced garlic and diced potato, stirring for an additional 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the potatoes are tender.
- Add the fresh watercress to the pot and cook for another 3-4 minutes until wilted.
- Remove from heat and blend the soup until smooth using an immersion blender or regular blender.
- Stir in the coconut milk, lemon juice, salt, and black pepper. Adjust seasoning to taste.
- Serve hot, garnished with a few watercress leaves if desired.
