- Fresh watercress - 200 grams
- Medium potato - 1, peeled and diced (about 150 grams)
- Small onion - 1, finely chopped
- Garlic - 1 clove, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Heavy cream - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the diced potato to the pot and cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes, or until the potato is tender.
- Add the fresh watercress to the pot and cook for another 5 minutes until wilted.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a countertop blender in batches.
- Stir in the heavy cream, lemon juice, salt, and black pepper to taste. Heat gently for another 2-3 minutes without bringing to a boil.
- Serve hot, garnished with a few extra watercress leaves if desired.
