Ingredients

  • Zucchini - 300 grams
  • Onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Fresh basil - 10 grams (or 1 tablespoon dried)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by washing and chopping the zucchini into small cubes.
  2. Peel and finely chop the onion and garlic.
  3. In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté for about 5 minutes until translucent.
  4. Add the garlic and sauté for an additional 1-2 minutes until fragrant.
  5. Stir in the zucchini cubes and sauté for another 5 minutes, mixing well.
  6. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes until the zucchini is tender.
  7. Add the fresh basil and season with salt and black pepper to taste.
  8. Using an immersion blender, blend the soup until smooth and creamy. Adjust the consistency with more broth if desired.
  9. Stir in the lemon juice before serving for a fresh touch.
  10. Serve hot, garnished with a few basil leaves if desired.
