- Zucchini - 300 grams
- Onion - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Fresh basil - 10 grams (or 1 tablespoon dried)
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Begin by washing and chopping the zucchini into small cubes.
- Peel and finely chop the onion and garlic.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion. Sauté for about 5 minutes until translucent.
- Add the garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the zucchini cubes and sauté for another 5 minutes, mixing well.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes until the zucchini is tender.
- Add the fresh basil and season with salt and black pepper to taste.
- Using an immersion blender, blend the soup until smooth and creamy. Adjust the consistency with more broth if desired.
- Stir in the lemon juice before serving for a fresh touch.
- Serve hot, garnished with a few basil leaves if desired.
