- Lemon juice - 1 tablespoon
- Cream (optional) - 30 ml
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped zucchini and vegetable broth to the pot, bringing the mixture to a boil.
- Reduce the heat and let it simmer for 15 minutes, or until the zucchini is tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth.
- Stir in the chopped basil, salt, pepper, and lemon juice, adjusting seasoning to taste.
- If desired, add the cream for a richer texture and stir well.
