  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Cream (optional) - 30 ml

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped zucchini and vegetable broth to the pot, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer for 15 minutes, or until the zucchini is tender.
  6. Remove the pot from heat and use an immersion blender to puree the soup until smooth.
  7. Stir in the chopped basil, salt, pepper, and lemon juice, adjusting seasoning to taste.
  8. If desired, add the cream for a richer texture and stir well.
  9. Serve hot, garnished with additional basil if desired.
