Ingredients

  • Butternut squash - 400 grams, peeled and cubed
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Thyme - 1/2 teaspoon, dried
  • Nutmeg - a pinch
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  2. Add the cubed butternut squash, dried thyme, salt, black pepper, and nutmeg to the pot. Stir well to combine the ingredients.
  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the squash is tender.
  4. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
