- Butternut squash - 400 grams, peeled and cubed
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Thyme - 1/2 teaspoon, dried
- Nutmeg - a pinch
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the cubed butternut squash, dried thyme, salt, black pepper, and nutmeg to the pot. Stir well to combine the ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the squash is tender.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
