Ingredients
- Green cabbage - 200g, chopped
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Thyme - 1/2 teaspoon, dried
- Bay leaf - 1
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced carrot and potato, cooking for another 5 minutes.
- Add the chopped cabbage, vegetable broth, salt, black pepper, thyme, and bay leaf to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes, or until the vegetables are tender.
- Remove the bay leaf and stir in the lemon juice.
- Serve hot, garnished with fresh parsley.
