Ingredients

  • Green cabbage - 200g, chopped
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Thyme - 1/2 teaspoon, dried
  • Bay leaf - 1
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced carrot and potato, cooking for another 5 minutes.
  4. Add the chopped cabbage, vegetable broth, salt, black pepper, thyme, and bay leaf to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes, or until the vegetables are tender.
  6. Remove the bay leaf and stir in the lemon juice.
  7. Serve hot, garnished with fresh parsley.
