- Vegetable broth - 500 ml
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Heavy cream - 50 ml (optional)
- Chives - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the chopped cauliflower, vegetable broth, dried thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
- Remove the bay leaf from the pot. Using an immersion blender, puree the soup until it reaches a smooth consistency. If you prefer a chunkier texture, blend only half of the soup and mix it back in.
- If desired, stir in the heavy cream for added richness and creaminess, then heat through for an additional 2-3 minutes.
- Serve hot, garnished with chopped chives.
