  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Heavy cream - 50 ml (optional)
  • Chives - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the chopped cauliflower, vegetable broth, dried thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
  3. Remove the bay leaf from the pot. Using an immersion blender, puree the soup until it reaches a smooth consistency. If you prefer a chunkier texture, blend only half of the soup and mix it back in.
  4. If desired, stir in the heavy cream for added richness and creaminess, then heat through for an additional 2-3 minutes.
  5. Serve hot, garnished with chopped chives.
