Ingredients
- Fresh mushrooms (mixed varieties) - 300 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried or 1 sprig fresh
- Bay leaf - 1
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Clean the mushrooms with a damp cloth and slice them thinly.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the sliced mushrooms to the pot and cook for another 5-7 minutes until they are softened and browned.
- Pour in the vegetable broth and add the thyme and bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
- Remove the bay leaf and blend the soup using an immersion blender until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the heavy cream, and season with salt and black pepper to taste. Heat gently for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
