Ingredients

  • Fresh mushrooms (mixed varieties) - 300 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried or 1 sprig fresh
  • Bay leaf - 1
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Clean the mushrooms with a damp cloth and slice them thinly.
  2. In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Add the sliced mushrooms to the pot and cook for another 5-7 minutes until they are softened and browned.
  4. Pour in the vegetable broth and add the thyme and bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  5. Remove the bay leaf and blend the soup using an immersion blender until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the heavy cream, and season with salt and black pepper to taste. Heat gently for another 2-3 minutes.
  7. Serve hot, garnished with fresh parsley.
