- Roasted chestnuts - 200 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Coconut cream - 100 ml
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Add the roasted chestnuts, vegetable broth, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
- Stir in the coconut cream and heat through for another 5 minutes. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
