Ingredients

  • Roasted chestnuts - 200 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Coconut cream - 100 ml
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  2. Add the roasted chestnuts, vegetable broth, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  3. Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
  4. Stir in the coconut cream and heat through for another 5 minutes. Adjust seasoning if necessary.
  5. Serve hot, garnished with fresh parsley.
