- Roasted chestnuts - 200 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, fresh or dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Cream - 100 ml (optional for garnish)
- Chopped parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic and thyme, and cook for an additional 1-2 minutes until fragrant.
- Stir in the roasted chestnuts, vegetable broth, and bay leaf. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Season with salt and black pepper to taste. If desired, stir in the cream for a richer flavor.
- Serve hot, garnished with chopped parsley and a drizzle of extra cream if desired.
