Ingredients

  • Carrots - 400 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Potato - 150 grams, peeled and diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Coconut milk - 100 ml (optional for creaminess)
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté for 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped carrots and diced potato to the pot, stirring well.
  5. Pour in the vegetable broth, and bring the mixture to a boil.
  6. Reduce the heat and add the thyme and cumin. Simmer for about 20 minutes, or until the carrots and potatoes are tender.
  7. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  8. If using, stir in the coconut milk and season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley.
