- Carrots - 400 grams, chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Potato - 150 grams, peeled and diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Coconut milk - 100 ml (optional for creaminess)
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté for 5 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped carrots and diced potato to the pot, stirring well.
- Pour in the vegetable broth, and bring the mixture to a boil.
- Reduce the heat and add the thyme and cumin. Simmer for about 20 minutes, or until the carrots and potatoes are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
- If using, stir in the coconut milk and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
