Ingredients

  • Carrots - 300 grams, peeled and chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Heavy cream - 50 ml (optional for garnish)
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the chopped carrots, dried thyme, bay leaf, salt, and pepper. Cook for 2-3 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20 minutes, or until the carrots are tender.
  5. Remove the bay leaf from the pot and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender.
  6. Taste and adjust seasoning if necessary. If you prefer a creamier texture, stir in the heavy cream at this stage.
  7. Serve hot, garnished with fresh parsley.
