- Celery - 300 grams, chopped
- Onion - 100 grams, diced
- Garlic - 2 cloves, minced
- Potato - 150 grams, peeled and diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.
- Stir in the chopped celery and potato, cooking for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, add the dried thyme, bay leaf, salt, and black pepper, and bring to a boil.
- Reduce the heat and let the soup simmer for about 15 minutes, or until the vegetables are tender.
- Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve warm, garnished with fresh parsley.
