Ingredients

  • Celery - 300 grams, chopped
  • Onion - 100 grams, diced
  • Garlic - 2 cloves, minced
  • Potato - 150 grams, peeled and diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion and minced garlic, and sauté for about 5 minutes until the onion is translucent.
  3. Stir in the chopped celery and potato, cooking for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth, add the dried thyme, bay leaf, salt, and black pepper, and bring to a boil.
  5. Reduce the heat and let the soup simmer for about 15 minutes, or until the vegetables are tender.
  6. Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
  7. Stir in the lemon juice and adjust seasoning if necessary.
  8. Serve warm, garnished with fresh parsley.
