  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the chopped celery and potato, cooking for another 5 minutes until slightly softened.
  4. Pour in the vegetable broth and add the dried thyme, salt, and black pepper.
