Ingredients

  • Broccoli - 300 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Fresh lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes until the vegetables are tender.
  4. Remove the pot from heat and stir in the coconut milk, lemon juice, salt, black pepper, and nutmeg.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and heat gently if needed. Serve hot, garnished with additional black pepper or a drizzle of olive oil if desired.
