- Broccoli - 300 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Fresh lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Nutmeg - a pinch
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
- Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes until the vegetables are tender.
- Remove the pot from heat and stir in the coconut milk, lemon juice, salt, black pepper, and nutmeg.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and heat gently if needed. Serve hot, garnished with additional black pepper or a drizzle of olive oil if desired.
