- Broccoli - 300 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Heavy cream - 100 ml
- Grated Gruyère cheese - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish, chopped
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the chopped broccoli to the pot and stir for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
- Stir in the heavy cream, grated Gruyère cheese, salt, and black pepper. Heat through for an additional 5 minutes, ensuring the cheese is melted.
- Serve hot, garnished with chopped fresh parsley.
