Ingredients

  • Broccoli - 300 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Heavy cream - 100 ml
  • Grated Gruyère cheese - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish, chopped

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the chopped broccoli to the pot and stir for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the broccoli is tender.
  4. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.
  5. Stir in the heavy cream, grated Gruyère cheese, salt, and black pepper. Heat through for an additional 5 minutes, ensuring the cheese is melted.
  6. Serve hot, garnished with chopped fresh parsley.
