Ingredients
- Swiss Chard - 200 grams, chopped
- Lentils (green or brown) - 100 grams, rinsed
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 750 ml
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Thyme - 1 teaspoon, dried
- Lemon juice - 1 tablespoon
- Parmesan cheese - 20 grams, grated (optional for serving)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, sautéing for about 5 minutes until they begin to soften.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed lentils, salt, black pepper, and thyme, mixing well with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low and let it simmer for about 20 minutes, or until the lentils are tender.
- Add the chopped Swiss chard to the pot and cook for another 5 minutes until the greens are wilted and tender.
- Stir in the lemon juice and adjust seasoning as needed before serving.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired.
