- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium pot over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
- Add the diced beets and carrot to the pot, stirring to combine. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.
- Pour in the vegetable broth and add thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the beets and carrots are tender.
- Remove the pot from heat and, using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
- Stir in the apple cider vinegar and adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
