  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
  2. Add the diced beets and carrot to the pot, stirring to combine. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.
  3. Pour in the vegetable broth and add thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the beets and carrots are tender.
  4. Remove the pot from heat and, using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
  5. Stir in the apple cider vinegar and adjust seasoning with more salt and pepper if needed.
  6. Serve hot, garnished with fresh parsley.
