- Beef shank - 300 grams
- Carrots - 2 medium, diced
- Celery - 2 stalks, diced

- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Bay leaf - 1
- Beef broth - 1 liter (or homemade)
- Olive oil - 1 tablespoon
- Sea salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrots and celery to the pot, cooking for another 5 minutes until the vegetables start to soften.
- Season the beef shank with salt and pepper, then add it to the pot. Brown the beef on all sides for about 5-7 minutes.
- Pour in the beef broth and add the thyme, rosemary, and bay leaf. Bring the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the beef is tender.
- Remove the beef from the pot and shred it using two forks. Discard any bones and return the shredded beef to the soup.
- Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
