  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Bay leaf - 1
  • Beef broth - 1 liter (or homemade)
  • Olive oil - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced carrots and celery to the pot, cooking for another 5 minutes until the vegetables start to soften.
  3. Season the beef shank with salt and pepper, then add it to the pot. Brown the beef on all sides for about 5-7 minutes.
  4. Pour in the beef broth and add the thyme, rosemary, and bay leaf. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the beef is tender.
  6. Remove the beef from the pot and shred it using two forks. Discard any bones and return the shredded beef to the soup.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
