- Almond milk - 150 ml
- Nutritional yeast - 2 tablespoons
- Chickpea flour - 50 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F) and grease two ramekins with a little olive oil.
- Wash and cut the cauliflower into florets, then steam them until tender, about 10 minutes.
- In a blender, combine the steamed cauliflower, almond milk, nutritional yeast, chickpea flour, olive oil, garlic powder, onion powder, turmeric powder, black salt, black pepper, and lemon juice. Blend until smooth and creamy.
- Fold in the chopped parsley gently into the cauliflower mixture.
- Pour the mixture evenly into the prepared ramekins, filling them about three-quarters full.
- Bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed up and golden brown.
- Remove from the oven and let them cool for a few minutes before serving.
