  • Cauliflower - 300 grams
  • Almond milk - 150 ml
  • Nutritional yeast - 2 tablespoons
  • Chickpea flour - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Black salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F) and grease two ramekins with a little olive oil.
  2. Wash and cut the cauliflower into florets, then steam them until tender, about 10 minutes.
  3. In a blender, combine the steamed cauliflower, almond milk, nutritional yeast, chickpea flour, olive oil, garlic powder, onion powder, turmeric powder, black salt, black pepper, and lemon juice. Blend until smooth and creamy.
  4. Fold in the chopped parsley gently into the cauliflower mixture.
  5. Pour the mixture evenly into the prepared ramekins, filling them about three-quarters full.
  6. Bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed up and golden brown.
  7. Remove from the oven and let them cool for a few minutes before serving.
