Ingredients
- Eggs - 4 large
- Gruyère cheese, grated - 100 grams
- Milk - 100 milliliters
- Butter - 30 grams
- All-purpose flour - 20 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg, freshly grated - a pinch
Steps
- Preheat your oven to 190°C (375°F) and grease two ramekins with butter.
- In a saucepan, melt the butter over medium heat. Add the flour and whisk for about 2 minutes until it forms a roux.
- Gradually pour in the milk while continuously whisking to avoid lumps. Cook for another 2-3 minutes until the mixture thickens.
- Remove from heat and stir in the grated Gruyère cheese, salt, pepper, and nutmeg until the cheese is melted and the mixture is smooth.
- In a separate bowl, separate the egg whites and yolks. Whisk the egg yolks into the cheese mixture until fully combined.
- In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture in three additions, being careful not to deflate the mixture.
- Pour the soufflé mixture evenly into the prepared ramekins, filling them about 3/4 full.
- Place the ramekins in a baking dish filled with hot water (bain-marie) and bake for 20-25 minutes until the soufflés are puffed and golden.
- Remove from the oven and serve immediately for the best texture.
