Ingredients

  • Eggs - 4 large
  • Gruyère cheese, grated - 100 grams
  • Milk - 100 milliliters
  • Butter - 30 grams
  • All-purpose flour - 20 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg, freshly grated - a pinch

Steps

  1. Preheat your oven to 190°C (375°F) and grease two ramekins with butter.
  2. In a saucepan, melt the butter over medium heat. Add the flour and whisk for about 2 minutes until it forms a roux.
  3. Gradually pour in the milk while continuously whisking to avoid lumps. Cook for another 2-3 minutes until the mixture thickens.
  4. Remove from heat and stir in the grated Gruyère cheese, salt, pepper, and nutmeg until the cheese is melted and the mixture is smooth.
  5. In a separate bowl, separate the egg whites and yolks. Whisk the egg yolks into the cheese mixture until fully combined.
  6. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture in three additions, being careful not to deflate the mixture.
  7. Pour the soufflé mixture evenly into the prepared ramekins, filling them about 3/4 full.
  8. Place the ramekins in a baking dish filled with hot water (bain-marie) and bake for 20-25 minutes until the soufflés are puffed and golden.
  9. Remove from the oven and serve immediately for the best texture.
