Ingredients

  • Egg whites - 3 large
  • Lemon juice - 30 ml
  • Zest of 1 lemon
  • Honey - 30 g
  • Greek yogurt - 100 g
  • Cornstarch - 10 g
  • Salt - a pinch
  • Butter (for greasing) - 5 g

Steps

  1. Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
  2. In a mixing bowl, combine Greek yogurt, lemon juice, lemon zest, honey, and cornstarch until smooth.
  3. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the egg whites into the lemon mixture in three additions, being careful not to deflate the egg whites.
  5. Spoon the mixture into the prepared ramekins, filling them about three-quarters full.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for 15-18 minutes, or until the soufflés are puffed and lightly golden on top.
  8. Remove from the oven, let cool slightly, and serve immediately for the best texture.
