- Egg whites - 3 large
- Lemon juice - 30 ml
- Zest of 1 lemon
- Honey - 30 g
- Greek yogurt - 100 g
- Cornstarch - 10 g
- Salt - a pinch
- Butter (for greasing) - 5 g
Steps
- Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
- In a mixing bowl, combine Greek yogurt, lemon juice, lemon zest, honey, and cornstarch until smooth.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the lemon mixture in three additions, being careful not to deflate the egg whites.
- Spoon the mixture into the prepared ramekins, filling them about three-quarters full.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 15-18 minutes, or until the soufflés are puffed and lightly golden on top.
- Remove from the oven, let cool slightly, and serve immediately for the best texture.
