- dark chocolate (70% cocoa) - 100 grams
- unsalted butter - 30 grams
- large eggs - 2
- granulated sugar - 50 grams
- all-purpose flour - 1 tablespoon
- vanilla extract - 1 teaspoon
- pinch of salt - 1
Steps
- Preheat your oven to 180°C (350°F). Grease two ramekins with butter and dust with sugar, tapping out the excess.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue whisking until stiff peaks form.
- In another bowl, whisk the egg yolks and vanilla extract until pale and creamy. Fold in the melted chocolate mixture gently.
- Sift the flour over the chocolate mixture and fold it in until just combined.
- Gently fold in a third of the whipped egg whites to lighten the mixture, then fold in the remaining egg whites until no white streaks remain.
- Pour the soufflé mixture into the prepared ramekins, filling them about three-quarters full.
- Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the soufflés have risen and are set on the edges but still slightly jiggly in the center.
- Serve immediately, dusted with powdered sugar if desired.
