Ingredients

  • dark chocolate (70% cocoa) - 100 grams
  • unsalted butter - 30 grams
  • large eggs - 2
  • granulated sugar - 50 grams
  • all-purpose flour - 1 tablespoon
  • vanilla extract - 1 teaspoon
  • pinch of salt - 1

Steps

  1. Preheat your oven to 180°C (350°F). Grease two ramekins with butter and dust with sugar, tapping out the excess.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue whisking until stiff peaks form.
  4. In another bowl, whisk the egg yolks and vanilla extract until pale and creamy. Fold in the melted chocolate mixture gently.
  5. Sift the flour over the chocolate mixture and fold it in until just combined.
  6. Gently fold in a third of the whipped egg whites to lighten the mixture, then fold in the remaining egg whites until no white streaks remain.
  7. Pour the soufflé mixture into the prepared ramekins, filling them about three-quarters full.
  8. Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the soufflés have risen and are set on the edges but still slightly jiggly in the center.
  9. Serve immediately, dusted with powdered sugar if desired.
