Ingredients

  • Chickpea flour - 100 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Garlic - 1 clove, minced
  • Zucchini - 100 grams, thinly sliced
  • Cherry tomatoes - 100 grams, halved

Steps

  1. In a mixing bowl, combine the chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, cumin, and minced garlic. Whisk until smooth and let it rest for 20 minutes.
  2. Preheat the oven to 220°C (428°F).
  3. While the batter is resting, prepare the vegetables. Toss the zucchini and cherry tomatoes with the remaining tablespoon of olive oil and a pinch of salt.
  4. Once the oven is preheated, pour the batter into a lightly greased oven-safe skillet or baking dish, spreading it evenly.
  5. Scatter the zucchini and cherry tomatoes over the batter evenly.
  6. Bake in the oven for about 15-20 minutes, or until the edges are golden brown and crispy.
  7. Remove from the oven and let it cool for a few minutes before slicing into wedges. Serve warm, garnished with fresh rosemary.
