- Chickpea flour - 100 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Zucchini - 100 grams, thinly sliced
- Cherry tomatoes - 100 grams, halved
Steps
- In a mixing bowl, combine the chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, cumin, and minced garlic. Whisk until smooth and let it rest for 20 minutes.
- Preheat the oven to 220°C (428°F).
- While the batter is resting, prepare the vegetables. Toss the zucchini and cherry tomatoes with the remaining tablespoon of olive oil and a pinch of salt.
- Once the oven is preheated, pour the batter into a lightly greased oven-safe skillet or baking dish, spreading it evenly.
- Scatter the zucchini and cherry tomatoes over the batter evenly.
- Bake in the oven for about 15-20 minutes, or until the edges are golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before slicing into wedges. Serve warm, garnished with fresh rosemary.
