Ingredients

  • Chickpea flour - 100 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh rosemary - 1 teaspoon, chopped
  • Optional toppings: cherry tomatoes, arugula, or avocado

Steps

  1. In a mixing bowl, combine the chickpea flour, water, salt, and black pepper. Whisk until you have a smooth batter. Let it rest for 20 minutes.
  2. Preheat your oven to 220°C (428°F) and place a cast-iron skillet or an oven-safe pan inside to heat up.
  3. After the batter has rested, stir in 1 tablespoon of olive oil and the chopped rosemary.
  4. Carefully remove the hot skillet from the oven and add the remaining tablespoon of olive oil, swirling it to coat the bottom.
  5. Pour the batter into the skillet and return it to the oven. Bake for about 10-15 minutes, or until the edges are golden and crispy.
  6. Remove from the oven and let it cool slightly before slicing. Serve warm, topped with optional cherry tomatoes, arugula, or avocado.
