- Chickpea flour - 100 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh rosemary - 1 teaspoon, chopped
- Optional toppings: cherry tomatoes, arugula, or avocado
Steps
- In a mixing bowl, combine the chickpea flour, water, salt, and black pepper. Whisk until you have a smooth batter. Let it rest for 20 minutes.
- Preheat your oven to 220°C (428°F) and place a cast-iron skillet or an oven-safe pan inside to heat up.
- After the batter has rested, stir in 1 tablespoon of olive oil and the chopped rosemary.
- Carefully remove the hot skillet from the oven and add the remaining tablespoon of olive oil, swirling it to coat the bottom.
- Pour the batter into the skillet and return it to the oven. Bake for about 10-15 minutes, or until the edges are golden and crispy.
- Remove from the oven and let it cool slightly before slicing. Serve warm, topped with optional cherry tomatoes, arugula, or avocado.
