Ingredients
- Shirataki noodles - 200 grams
- Pancetta - 100 grams, diced
- Eggs - 2 large
- Parmesan cheese - 50 grams, grated
- Garlic - 1 clove, minced
- Black pepper - to taste
- Salt - to taste
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the shirataki noodles under cold water and drain well. Pat them dry with a paper towel.
- In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and sauté until crispy, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- In a bowl, whisk together the eggs and grated Parmesan cheese until smooth. Season with black pepper.
- Add the shirataki noodles to the skillet with the pancetta and garlic, tossing to combine.
- Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot noodles, tossing continuously to create a creamy sauce. The residual heat will cook the eggs without scrambling them.
- Season with salt and additional black pepper to taste. Serve immediately, garnished with chopped fresh parsley.
