  • Shirataki noodles - 200 grams
  • Pancetta - 100 grams, diced
  • Eggs - 2 large
  • Parmesan cheese - 50 grams, grated
  • Garlic - 1 clove, minced
  • Black pepper - to taste

  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the shirataki noodles under cold water and drain well. Pat them dry with a paper towel.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and sauté until crispy, about 5-7 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. In a bowl, whisk together the eggs and grated Parmesan cheese until smooth. Season with black pepper.
  5. Add the shirataki noodles to the skillet with the pancetta and garlic, tossing to combine.
  6. Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot noodles, tossing continuously to create a creamy sauce. The residual heat will cook the eggs without scrambling them.
  7. Season with salt and additional black pepper to taste. Serve immediately, garnished with chopped fresh parsley.
