  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or peeler to create zucchini noodles and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp and scallops to the skillet, cooking until they turn opaque, about 3-4 minutes for shrimp and 2-3 minutes for scallops.
  4. Stir in the halved cherry tomatoes, lemon juice, salt, black pepper, and crushed red pepper flakes. Cook for an additional 2-3 minutes until the tomatoes soften.
