Ingredients

  • zucchini - 2 medium
  • olive oil - 2 tablespoons
  • onion - 1 small, diced
  • garlic - 2 cloves, minced
  • red bell pepper - 1/2, diced
  • diced tomatoes - 400 grams (1 can)
  • fish stock - 500 ml
  • dry white wine - 100 ml
  • saffron threads - 1/4 teaspoon
  • bay leaf - 1
  • thyme - 1 teaspoon, dried
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • shrimp - 200 grams, peeled and deveined
  • white fish fillets (such as cod or haddock) - 200 grams, cut into bite-sized pieces
  • mussels - 200 grams, cleaned
  • fresh parsley - 2 tablespoons, chopped, for garnish
  • lemon wedges - for serving

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles and set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, and red bell pepper, sautéing until softened, about 5 minutes.
  3. Add the diced tomatoes, fish stock, white wine, saffron, bay leaf, thyme, salt, and black pepper. Stir well and bring to a simmer.
  4. Once simmering, add the shrimp, white fish, and mussels. Cook for about 5-7 minutes, until the seafood is cooked through and mussels have opened.
  5. In the last 2 minutes of cooking, gently fold in the zoodles and let them warm in the broth.
  6. Remove the bay leaf and serve the bouillabaisse hot, garnished with fresh parsley and lemon wedges.
