Ingredients
- Olive oil - 2 tablespoons
- Medium onion, diced - 1
- Garlic cloves, minced - 2
- Red bell pepper, chopped - 1
- Short-grain rice - 1 cup
- Vegetable broth - 2 cups
- Saffron threads - a pinch
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes, halved - 1 cup
- Frozen peas - 1/2 cup
- Kosher shrimp, peeled and deveined - 200 grams
- Kosher mussels, cleaned - 200 grams
- Fresh parsley, chopped - for garnish
- Lemon wedges - for serving
Steps
- In a medium-sized skillet or paella pan, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and chopped red bell pepper, cooking for another 3 minutes until softened.
- Add the short-grain rice, stirring to coat the grains in the oil and cook for 2 minutes.
- In a small bowl, dissolve the saffron threads in a little warm vegetable broth, then add it to the skillet along with the smoked paprika, salt, and black pepper.
- Pour in the remaining vegetable broth and bring to a gentle boil.
- Add the halved cherry tomatoes and frozen peas, stirring to combine.
- Reduce the heat to low and arrange the shrimp and mussels on top of the rice mixture.
- Cover the skillet with a lid or aluminum foil and let it simmer for about 15-20 minutes, until the rice is cooked and the seafood is fully cooked and opened.
- Once done, remove from heat and let it sit covered for 5 minutes.
- Garnish with chopped parsley and serve with lemon wedges on the side.
