Ingredients

  • Olive oil - 2 tablespoons
  • Medium onion, diced - 1
  • Garlic cloves, minced - 2
  • Red bell pepper, chopped - 1
  • Short-grain rice - 1 cup
  • Vegetable broth - 2 cups
  • Saffron threads - a pinch
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes, halved - 1 cup
  • Frozen peas - 1/2 cup
  • Kosher shrimp, peeled and deveined - 200 grams
  • Kosher mussels, cleaned - 200 grams
  • Fresh parsley, chopped - for garnish
  • Lemon wedges - for serving

Steps

  1. In a medium-sized skillet or paella pan, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and chopped red bell pepper, cooking for another 3 minutes until softened.
  4. Add the short-grain rice, stirring to coat the grains in the oil and cook for 2 minutes.
  5. In a small bowl, dissolve the saffron threads in a little warm vegetable broth, then add it to the skillet along with the smoked paprika, salt, and black pepper.
  6. Pour in the remaining vegetable broth and bring to a gentle boil.
  7. Add the halved cherry tomatoes and frozen peas, stirring to combine.
  8. Reduce the heat to low and arrange the shrimp and mussels on top of the rice mixture.
  9. Cover the skillet with a lid or aluminum foil and let it simmer for about 15-20 minutes, until the rice is cooked and the seafood is fully cooked and opened.
  10. Once done, remove from heat and let it sit covered for 5 minutes.
  11. Garnish with chopped parsley and serve with lemon wedges on the side.
