Ingredients

  • whole wheat flour - 150 grams
  • baking powder - 10 grams
  • salt - 2 grams
  • unsalted butter (cold, diced) - 40 grams
  • low-fat Greek yogurt - 100 grams
  • fresh basil (chopped) - 10 grams
  • fresh thyme (chopped) - 5 grams
  • grated cheese (such as Gruyère) - 30 grams
  • black pepper - 1 gram
  • milk (for brushing) - 15 ml

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the whole wheat flour, baking powder, and salt.
  3. Add the cold, diced butter into the flour mixture, and use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the chopped basil, thyme, grated cheese, and black pepper until evenly distributed.
  5. Add the Greek yogurt and mix gently until just combined to form a dough.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  7. Pat the dough into a round about 2.5 cm thick and cut it into 4 wedges or use a round cutter.
  8. Place the scones on the prepared baking sheet and brush the tops with milk.
  9. Bake for 15-20 minutes or until the scones are golden brown.
  10. Remove from the oven and let them cool slightly before serving.
