- whole wheat flour - 150 grams
- baking powder - 10 grams
- salt - 2 grams
- unsalted butter (cold, diced) - 40 grams
- low-fat Greek yogurt - 100 grams
- fresh basil (chopped) - 10 grams
- fresh thyme (chopped) - 5 grams
- grated cheese (such as Gruyère) - 30 grams
- black pepper - 1 gram
- milk (for brushing) - 15 ml
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the whole wheat flour, baking powder, and salt.
- Add the cold, diced butter into the flour mixture, and use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the chopped basil, thyme, grated cheese, and black pepper until evenly distributed.
- Add the Greek yogurt and mix gently until just combined to form a dough.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a round about 2.5 cm thick and cut it into 4 wedges or use a round cutter.
- Place the scones on the prepared baking sheet and brush the tops with milk.
- Bake for 15-20 minutes or until the scones are golden brown.
- Remove from the oven and let them cool slightly before serving.
