Ingredients
- Whole wheat flour - 150g
- Cold water - 60ml
- Olive oil - 50ml
- Zucchini - 100g, sliced
- Bell pepper - 100g, diced
- Red onion - 50g, sliced
- Cherry tomatoes - 100g, halved
- Garlic - 2 cloves, minced
- Vegetable BBQ sauce - 2 tablespoons
- Fresh basil - 10g, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine whole wheat flour and salt. Add olive oil and cold water, mixing until a dough forms. Knead gently, wrap in plastic, and refrigerate for 30 minutes.
- Preheat the grill or a stovetop grill pan over medium heat.
- In a bowl, toss zucchini, bell pepper, red onion, cherry tomatoes, garlic, salt, and black pepper with olive oil.
- Grill the vegetables for about 10-12 minutes, or until tender and slightly charred. Remove from heat and stir in the BBQ sauce and fresh basil.
- Roll out the chilled dough on a floured surface into a rough circle about 5mm thick. Transfer to a baking sheet lined with parchment paper.
- Spoon the grilled vegetable mixture into the center of the dough, leaving a 3-4 cm border. Fold the edges of the dough over the filling, pleating as necessary.
- Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until the crust is golden brown.
- Allow to cool slightly before slicing and serving warm.
