Ingredients
- All-purpose flour - 100 grams
- Eggs - 2 large
- Milk - 250 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Zucchini - 100 grams, sliced
- Red bell pepper - 100 grams, sliced
- Mushrooms - 100 grams, sliced
- Red onion - 50 grams, sliced
- BBQ sauce - 100 ml
- Fresh basil - 10 grams, chopped
- Feta cheese - 50 grams, crumbled
Steps
- In a bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat and add a little olive oil. Pour a ladle of batter into the skillet, swirling to cover the base evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute. Repeat with the remaining batter to make 4 crepes.
- In the same skillet, add another tablespoon of olive oil and sauté the zucchini, red bell pepper, mushrooms, and red onion until tender, about 5-7 minutes. Season with salt and pepper to taste.
- Remove the vegetables from heat and stir in the BBQ sauce and chopped basil.
- Place a couple of spoonfuls of the vegetable mixture in the center of each crepe, sprinkle with crumbled feta cheese, and fold the crepes over to enclose the filling.
- Serve warm, garnished with additional fresh basil if desired.
