Steps
- In a mixing bowl, whisk together the almond flour, eggs, almond milk, salt, and black pepper until smooth.
- Heat a non-stick skillet over medium heat and melt 5 grams of butter.
- Pour a ladleful of the crêpe batter into the skillet, swirling to coat the surface evenly. Cook for about 2 minutes until the edges start to lift and the bottom is lightly golden.
- Flip the crêpe using a spatula and cook for another 1-2 minutes on the other side. Transfer to a plate and repeat with the remaining batter, adding more butter as needed.
- Once all crêpes are cooked, lay one crêpe flat on a clean surface. Place slices of ham and a sprinkle of cheese on one half of the crêpe.
- Fold the crêpe over to cover the filling, and place it back into the skillet for 1-2 minutes until the cheese melts.
