Ingredients

  • Almond flour - 100 grams
  • Eggs - 2 large
  • Unsweetened almond milk - 200 ml
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cooked ham - 100 grams, sliced
  • Shredded cheese (such as Gruyère or mozzarella) - 50 grams
  • Butter - 20 grams, for cooking
  • Fresh parsley - for garnish, optional

Steps

  1. In a mixing bowl, whisk together the almond flour, eggs, almond milk, salt, and black pepper until smooth.
  2. Heat a non-stick skillet over medium heat and melt 5 grams of butter.
  3. Pour a ladleful of the crêpe batter into the skillet, swirling to coat the surface evenly. Cook for about 2 minutes until the edges start to lift and the bottom is lightly golden.
  4. Flip the crêpe using a spatula and cook for another 1-2 minutes on the other side. Transfer to a plate and repeat with the remaining batter, adding more butter as needed.
  5. Once all crêpes are cooked, lay one crêpe flat on a clean surface. Place slices of ham and a sprinkle of cheese on one half of the crêpe.
  6. Fold the crêpe over to cover the filling, and place it back into the skillet for 1-2 minutes until the cheese melts.
  7. Repeat with the remaining crêpes and filling. Serve warm, garnished with fresh parsley if desired.
