Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 100 grams
  • Butter - 50 grams, melted
  • Eggs - 2 large
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Heavy cream - 50 ml

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes. Allow to cool slightly.
  3. In a large bowl, combine almond flour, melted butter, one egg, Parmesan cheese, salt, and pepper. Mix until a dough forms.
  4. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the base with a fork to prevent bubbling.
  5. Blind bake the tart crust for 10 minutes in the preheated oven. Remove and set aside.
  6. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  7. Add the steamed cauliflower and thyme to the skillet, stirring gently for about 5 minutes. Season with salt and pepper.
  8. In a bowl, whisk together the remaining egg and heavy cream until smooth. Add the cauliflower mixture and stir to combine.
  9. Pour the cauliflower filling into the pre-baked tart crust, spreading it evenly.
  10. Return the tart to the oven and bake for an additional 20-25 minutes, until the filling is set and the top is lightly golden.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
