- Cauliflower - 300 grams
- Almond flour - 100 grams
- Butter - 50 grams, melted
- Eggs - 2 large
- Parmesan cheese - 30 grams, grated
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Heavy cream - 50 ml
Steps
- Preheat your oven to 180°C (350°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes. Allow to cool slightly.
- In a large bowl, combine almond flour, melted butter, one egg, Parmesan cheese, salt, and pepper. Mix until a dough forms.
- Press the dough into a tart pan evenly across the bottom and up the sides. Prick the base with a fork to prevent bubbling.
- Blind bake the tart crust for 10 minutes in the preheated oven. Remove and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the steamed cauliflower and thyme to the skillet, stirring gently for about 5 minutes. Season with salt and pepper.
- In a bowl, whisk together the remaining egg and heavy cream until smooth. Add the cauliflower mixture and stir to combine.
- Pour the cauliflower filling into the pre-baked tart crust, spreading it evenly.
- Return the tart to the oven and bake for an additional 20-25 minutes, until the filling is set and the top is lightly golden.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
