  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, diced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Low-sodium chicken broth - 150 milliliters
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large skillet over medium heat.

  6. Reduce heat to low, cover, and let cook for 10-15 minutes until the veal is tender.
