Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Red bell pepper - 1, sliced
  • Zucchini - 1, sliced
  • Carrot - 1, julienned
  • Thyme - 1 teaspoon, fresh or dried
  • Rosemary - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 100 ml
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Trim any excess fat from the pork tenderloin and cut it into bite-sized pieces.
  2. In a large skillet, heat olive oil over medium-high heat. Add the pork pieces and sauté until browned on all sides, about 5-7 minutes.
  3. Remove the pork from the skillet and set aside. In the same skillet, add the minced garlic and chopped shallot, cooking for 2-3 minutes until fragrant.
  4. Add the sliced red bell pepper, zucchini, and julienned carrot to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
  5. Return the pork to the skillet, sprinkle with thyme, rosemary, salt, and black pepper. Stir to combine.
  6. Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes, allowing the flavors to meld together.
  7. Remove from heat and garnish with fresh parsley before serving.
