- Pork tenderloin - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Red bell pepper - 1, sliced
- Zucchini - 1, sliced
- Carrot - 1, julienned
- Thyme - 1 teaspoon, fresh or dried
- Rosemary - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 100 ml
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Trim any excess fat from the pork tenderloin and cut it into bite-sized pieces.
- In a large skillet, heat olive oil over medium-high heat. Add the pork pieces and sauté until browned on all sides, about 5-7 minutes.
- Remove the pork from the skillet and set aside. In the same skillet, add the minced garlic and chopped shallot, cooking for 2-3 minutes until fragrant.
- Add the sliced red bell pepper, zucchini, and julienned carrot to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
- Return the pork to the skillet, sprinkle with thyme, rosemary, salt, and black pepper. Stir to combine.
- Pour in the vegetable broth and bring to a simmer. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Remove from heat and garnish with fresh parsley before serving.
