Ingredients
- Salmon fillets - 2 x 150g
- Zucchini - 100g, thinly sliced
- Cherry tomatoes - 100g, halved
- Bell pepper - 1 small, thinly sliced
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Lemon - 1, juiced and zested
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut two large pieces of parchment paper, approximately 30x40 cm each.
- In a bowl, combine zucchini, cherry tomatoes, bell pepper, garlic, thyme, lemon juice, olive oil, salt, and pepper.
- Place one salmon fillet in the center of each parchment piece.
- Divide the vegetable mixture evenly on top of each salmon fillet.
- Sprinkle lemon zest over the top of the vegetables and salmon.
- Fold the parchment paper over the salmon and vegetables, sealing the edges tightly to create a packet.
- Place the packets on a baking sheet and bake in the preheated oven for 15-20 minutes until the salmon is cooked through.
- Remove from the oven, let rest for a minute, then carefully open the packets (watch for steam) and serve.
