Ingredients

  • Salmon fillets - 2 x 150g
  • Zucchini - 100g, thinly sliced
  • Cherry tomatoes - 100g, halved
  • Bell pepper - 1 small, thinly sliced
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Lemon - 1, juiced and zested
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut two large pieces of parchment paper, approximately 30x40 cm each.
  3. In a bowl, combine zucchini, cherry tomatoes, bell pepper, garlic, thyme, lemon juice, olive oil, salt, and pepper.
  4. Place one salmon fillet in the center of each parchment piece.
  5. Divide the vegetable mixture evenly on top of each salmon fillet.
  6. Sprinkle lemon zest over the top of the vegetables and salmon.
  7. Fold the parchment paper over the salmon and vegetables, sealing the edges tightly to create a packet.
  8. Place the packets on a baking sheet and bake in the preheated oven for 15-20 minutes until the salmon is cooked through.
  9. Remove from the oven, let rest for a minute, then carefully open the packets (watch for steam) and serve.
