- Pork shoulder - 300 grams
- Pork belly - 200 grams
- Garlic - 3 cloves, minced
- Fresh thyme - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- White wine - 50 ml
- Natural hog casings - 2 meters
Steps
- Soak the hog casings in water for at least 30 minutes to make them pliable.
- In a large bowl, combine the ground pork shoulder and pork belly with minced garlic, thyme, parsley, black pepper, and salt.
- Add the white wine to the meat mixture and mix until well combined and slightly sticky.
- Rinse the soaked hog casings under cold water and then carefully stuff them with the meat mixture using a sausage stuffer or a funnel. Twist into 10-12 cm links and tie off the ends.
- Preheat your grill to medium-high heat.
- Grill the sausages for about 15-20 minutes, turning occasionally until they are browned and cooked through.
- Remove from the grill and let rest for a few minutes before serving.
