Ingredients

  • Pork shoulder - 300 grams
  • Pork belly - 200 grams
  • Garlic - 3 cloves, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • White wine - 50 ml
  • Natural hog casings - 2 meters

Steps

  1. Soak the hog casings in water for at least 30 minutes to make them pliable.
  2. In a large bowl, combine the ground pork shoulder and pork belly with minced garlic, thyme, parsley, black pepper, and salt.
  3. Add the white wine to the meat mixture and mix until well combined and slightly sticky.
  4. Rinse the soaked hog casings under cold water and then carefully stuff them with the meat mixture using a sausage stuffer or a funnel. Twist into 10-12 cm links and tie off the ends.
  5. Preheat your grill to medium-high heat.
  6. Grill the sausages for about 15-20 minutes, turning occasionally until they are browned and cooked through.
  7. Remove from the grill and let rest for a few minutes before serving.
