Ingredients

  • Salsify - 300 grams
  • Coconut cream - 150 ml
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 teaspoon

Steps

  1. Peel the salsify roots and cut them into 1-inch pieces. To prevent browning, place them in a bowl of water with a splash of lemon juice.
  2. In a medium pot, bring salted water to a boil. Add the salsify pieces and cook for about 10-15 minutes until tender. Drain and set aside.
  3. In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.
  4. Reduce the heat to low, and stir in the coconut cream, mixing well. Add the cooked salsify pieces to the skillet and gently toss to coat.
  5. Season with salt, black pepper, and chopped parsley. Cook for another 5 minutes, allowing the flavors to meld.
  6. Serve hot, garnished with additional parsley if desired.
