- Salsify - 300 grams
- Coconut cream - 150 ml
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 teaspoon
Steps
- Peel the salsify roots and cut them into 1-inch pieces. To prevent browning, place them in a bowl of water with a splash of lemon juice.
- In a medium pot, bring salted water to a boil. Add the salsify pieces and cook for about 10-15 minutes until tender. Drain and set aside.
- In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Reduce the heat to low, and stir in the coconut cream, mixing well. Add the cooked salsify pieces to the skillet and gently toss to coat.
- Season with salt, black pepper, and chopped parsley. Cook for another 5 minutes, allowing the flavors to meld.
- Serve hot, garnished with additional parsley if desired.
