- Shortcrust pastry - 100g
- Smoked salmon - 100g
- Eggs - 3 large
- Heavy cream - 100ml
- Milk - 50ml
- Dijon mustard - 1 tsp
- Fresh dill - 1 tbsp, chopped
- Salt - 1/4 tsp
- Black pepper - 1/4 tsp
- Shallot - 1 small, finely chopped
- Capers - 1 tbsp, rinsed and chopped
Steps
- Preheat the oven to 180°C (350°F).
- Roll out the shortcrust pastry and fit it into a 20cm tart pan, trimming the edges. Prick the bottom with a fork and chill in the refrigerator for 15 minutes.
- In a skillet, sauté the chopped shallot over medium heat until translucent, about 3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the eggs, heavy cream, milk, Dijon mustard, dill, salt, and black pepper until smooth.
- Spread the sautéed shallots evenly over the chilled pastry crust, followed by the smoked salmon and capers.
- Pour the egg mixture over the salmon and shallots, ensuring everything is evenly distributed.
- Bake in the preheated oven for 25-30 minutes, or until the quiche is set and lightly golden on top.
- Allow to cool for 5 minutes before slicing and serving warm.
