Ingredients

  • Shortcrust pastry - 100g
  • Smoked salmon - 100g
  • Eggs - 3 large
  • Heavy cream - 100ml
  • Milk - 50ml
  • Dijon mustard - 1 tsp
  • Fresh dill - 1 tbsp, chopped
  • Salt - 1/4 tsp
  • Black pepper - 1/4 tsp
  • Shallot - 1 small, finely chopped
  • Capers - 1 tbsp, rinsed and chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and fit it into a 20cm tart pan, trimming the edges. Prick the bottom with a fork and chill in the refrigerator for 15 minutes.
  3. In a skillet, sauté the chopped shallot over medium heat until translucent, about 3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, whisk together the eggs, heavy cream, milk, Dijon mustard, dill, salt, and black pepper until smooth.
  5. Spread the sautéed shallots evenly over the chilled pastry crust, followed by the smoked salmon and capers.
  6. Pour the egg mixture over the salmon and shallots, ensuring everything is evenly distributed.
  7. Bake in the preheated oven for 25-30 minutes, or until the quiche is set and lightly golden on top.
  8. Allow to cool for 5 minutes before slicing and serving warm.
