- Salmon fillets - 2 x 150g
- Dijon mustard - 2 tablespoons
- Olive oil - 1 tablespoon
- Fresh lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 200g, halved
- Asparagus - 150g, trimmed
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix together the Dijon mustard, olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to create the sauce.
- Place the salmon fillets on a baking tray lined with parchment paper and spread the mustard sauce evenly over the top of each fillet.
- Arrange the halved cherry tomatoes and trimmed asparagus around the salmon on the baking tray.
- Drizzle a little olive oil over the vegetables and season with salt and pepper.
- Bake in the preheated oven for 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately, garnished with extra dill if desired.
