Ingredients

  • Salmon fillets - 2 x 150g
  • Dijon mustard - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Fresh lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 200g, halved
  • Asparagus - 150g, trimmed

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the Dijon mustard, olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to create the sauce.
  3. Place the salmon fillets on a baking tray lined with parchment paper and spread the mustard sauce evenly over the top of each fillet.
  4. Arrange the halved cherry tomatoes and trimmed asparagus around the salmon on the baking tray.
  5. Drizzle a little olive oil over the vegetables and season with salt and pepper.
  6. Bake in the preheated oven for 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve immediately, garnished with extra dill if desired.
