- Buckwheat flour - 100 grams
- Water - 200 ml
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Smoked salmon - 100 grams, chopped
- Cream cheese - 50 grams, softened
- Fresh dill - 1 tablespoon, chopped
- Fresh chives - 1 tablespoon, chopped
- Black pepper - to taste
- Lemon - 1, for zest and juice
- Mixed greens - 50 grams, for serving
Steps
- In a bowl, mix the buckwheat flour, water, and salt until smooth to form the galette batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Pour half of the galette batter into the skillet, swirling to spread evenly. Cook for 3-4 minutes until the edges start to lift and the bottom is golden brown.
- Flip the galette and cook for another 2-3 minutes. Remove from the skillet and keep warm. Repeat with the remaining batter to make a second galette.
- In a separate bowl, combine smoked salmon, cream cheese, dill, chives, lemon zest, and a squeeze of lemon juice. Season with black pepper to taste.
- Spread the salmon mixture evenly over one galette, then top with the second galette.
- Cut into wedges and serve with mixed greens drizzled with olive oil and lemon juice.
