Ingredients

  • Buckwheat flour - 100 grams
  • Water - 200 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Smoked salmon - 100 grams, chopped
  • Cream cheese - 50 grams, softened
  • Fresh dill - 1 tablespoon, chopped
  • Fresh chives - 1 tablespoon, chopped
  • Black pepper - to taste
  • Lemon - 1, for zest and juice
  • Mixed greens - 50 grams, for serving

Steps

  1. In a bowl, mix the buckwheat flour, water, and salt until smooth to form the galette batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Pour half of the galette batter into the skillet, swirling to spread evenly. Cook for 3-4 minutes until the edges start to lift and the bottom is golden brown.
  4. Flip the galette and cook for another 2-3 minutes. Remove from the skillet and keep warm. Repeat with the remaining batter to make a second galette.
  5. In a separate bowl, combine smoked salmon, cream cheese, dill, chives, lemon zest, and a squeeze of lemon juice. Season with black pepper to taste.
  6. Spread the salmon mixture evenly over one galette, then top with the second galette.
  7. Cut into wedges and serve with mixed greens drizzled with olive oil and lemon juice.
