Ingredients

  • Salmon fillet - 200 grams
  • Zucchini - 100 grams, sliced thinly
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Lemon - 1, thinly sliced
  • Fresh dill - 5 grams, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 1 clove, minced
  • Parchment paper - 2 sheets

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut two sheets of parchment paper, each about 30x40 cm.
  3. In a small bowl, mix olive oil, garlic, salt, and black pepper.
  4. Place a salmon fillet in the center of each parchment sheet.
  5. Top the salmon with sliced zucchini, cherry tomatoes, red onion, lemon slices, and chopped dill.
  6. Drizzle the olive oil mixture evenly over the salmon and vegetables.
  7. Fold the edges of the parchment paper over the salmon and vegetables, crimping to seal tightly.
  8. Place the packets on a baking tray and bake in the preheated oven for 20 minutes.
  9. Remove from the oven and let sit for 5 minutes before carefully opening the packets to avoid steam.
  10. Serve immediately, garnished with additional dill if desired.
