  • Salmon fillet - 250 grams
  • Gluten-free puff pastry - 250 grams
  • Cream cheese - 50 grams
  • Fresh dill - 1 tablespoon, chopped
  • Lemon zest - 1 teaspoon
  • Egg - 1, beaten
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the cream cheese, chopped dill, lemon zest, salt, and pepper until well combined.
  3. Roll out the gluten-free puff pastry on a floured surface to about 0.5 cm thickness.
  4. Place the salmon fillet on the pastry and spread the cream cheese mixture over the top.
  5. Fold the pastry over the salmon to enclose it completely, sealing the edges with your fingers.
  6. Brush the top of the pastry with the beaten egg for a golden finish.
  7. Place the wrapped salmon on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.
  9. Remove from the oven and let it rest for 5 minutes before slicing.
  10. Serve warm with a side salad or steamed vegetables.
