Ingredients

  • Cherry tomatoes - 200 grams
  • Green beans - 150 grams
  • Potatoes - 200 grams
  • Olives (Kalamata) - 50 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Firm tofu - 200 grams
  • Olive oil - 3 tablespoons
  • Dijon mustard - 1 tablespoon
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and cut the potatoes into small cubes, then boil them in salted water for about 10 minutes until tender. Drain and set aside.
  3. Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
  4. Chop the zucchini and red bell pepper into bite-sized pieces.
  5. Toss the cherry tomatoes, zucchini, and red bell pepper with 1 tablespoon of olive oil, salt, and pepper on a baking tray. Roast in the oven for about 15-20 minutes until slightly caramelized.
  6. While the vegetables are roasting, press the tofu to remove excess moisture, then cut into cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the tofu until golden brown on all sides, about 8-10 minutes.
  7. In a small bowl, whisk together the remaining olive oil, Dijon mustard, red wine vinegar, minced garlic, salt, and pepper to create the dressing.
  8. In a large mixing bowl, combine the roasted vegetables, boiled potatoes, blanched green beans, sautéed tofu, and olives. Drizzle with the dressing and toss gently to combine.
  9. Serve the salad garnished with fresh basil leaves.
