Ingredients
- Cherry tomatoes - 200 grams
- Green beans - 150 grams
- Potatoes - 200 grams
- Olives (Kalamata) - 50 grams
- Red bell pepper - 1 medium
- Zucchini - 1 medium
- Firm tofu - 200 grams
- Olive oil - 3 tablespoons
- Dijon mustard - 1 tablespoon
- Red wine vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh basil - 10 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (390°F).
- Wash and cut the potatoes into small cubes, then boil them in salted water for about 10 minutes until tender. Drain and set aside.
- Trim the ends of the green beans and blanch them in boiling water for 3-4 minutes, then transfer to an ice bath to stop the cooking process. Drain and set aside.
- Chop the zucchini and red bell pepper into bite-sized pieces.
- Toss the cherry tomatoes, zucchini, and red bell pepper with 1 tablespoon of olive oil, salt, and pepper on a baking tray. Roast in the oven for about 15-20 minutes until slightly caramelized.
- While the vegetables are roasting, press the tofu to remove excess moisture, then cut into cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the tofu until golden brown on all sides, about 8-10 minutes.
- In a small bowl, whisk together the remaining olive oil, Dijon mustard, red wine vinegar, minced garlic, salt, and pepper to create the dressing.
- In a large mixing bowl, combine the roasted vegetables, boiled potatoes, blanched green beans, sautéed tofu, and olives. Drizzle with the dressing and toss gently to combine.
- Serve the salad garnished with fresh basil leaves.
